Soprana Rooftop Cucina Welcomes Executive Chef Jon Cropf
There’s a new chef at the helm of Soprana Rooftop Cucina.
Executive Chef Jon Cropf has joined the downtown Asheville restaurant, bringing nearly three decades of hospitality experience and more than 12 years as an executive chef to Soprana’s kitchen.
Cropf comes to Asheville after leading restaurants, boutique hotels and destination resorts across the country. Before joining Soprana, he served as Executive Chef at Trummer’s on Main in Virginia, where the restaurant received three stars from The Washington Post, was a James Beard House guest chef and was named a multi-year RAMMY Award finalist for Fine Dining Restaurant of the Year.
His career has also included executive leadership roles with Avocet Hospitality Group, overseeing The Drawing Room, BLU Restaurant, The Rooftop and The Vendue Hotel in Charleston, as well as culinary leadership at Tahoe Mountain Club, where Wild Goose was recognized by Bon Appétit among Lake Tahoe’s best restaurants.
Cropf joins Soprana during a period of momentum for the restaurant. Under the direction of Parks Hospitality Vice President of Food & Beverage Philip Bollhoefer, he will continue evolving the menu while deepening partnerships with regional farmers, producers and artisans.

That foundation has already earned Soprana national and regional recognition. The restaurant was included on the MICHELIN Guide’s inaugural Recommended list for the American South, named Pizza Today’s 2025 Pizza Company of the Year — Southeast and received the publication’s 2025 Community Involvement Award for its response to Hurricane Helene. Tasting Table also named Soprana its Best Restaurant with a View in North Carolina.
Located atop Embassy Suites by Hilton Asheville Downtown, Soprana’s “Alps Meets Appalachia” approach brings together Italian tradition and Appalachian ingredients across brick oven pizzas, fresh salads, Italian-inspired small plates and classic cocktails, with panoramic views of the Blue Ridge Mountains.
